you'll Need:
- 1 pound of ground beef or ground turkey
- 1 package of taco seasoning
- 1 (10 ounces) tomatoes with green chili, not dried
- 1 (15 ounces) can be refried bean
- 1 (15 ounces) can be corn, drained and rinsed
- 1 (15 ounce) can of black beans, drain and rinse
- 2 cups shredded cheese
- 1/2 cup sour cream
- 10-12 corn tortillas
How to Make:
- Preheat the oven to 350
- In a large brown ground beef roast beef, drain any fat.
- Add unmulled tomatoes with green chili and taco seasoning, stirring the mixture until the seasoning dissolves. Let the mixture boil until all the liquid is gone, about 6 minutes. Then remove from the heat and set aside.
- Meanwhile, drain and rinse the black beans and corn. Put aside. Open the refried beans and set aside.
- Spray a 9x13 casserole plate with cooking spray.
- Start your casserole with a base layer of 4-6 corn tortillas depending on its size.
- Then layer the remaining ingredients in this order, refried beans, taco meat, corn, black beans, sour cream and cheese.
- Repeat, until your fields disappear.
- Bake 30 minutes, chill 5 minutes before serving.
- Top with your favorites like avocados, tomatoes, and cilantro!
