ingredients
- 3 4 ounces of chicken breast, boneless skin
- 1 cup of quick brown rice or white
- 1 glass of water
- 2 tablespoons seasoning for tacos 1 package, see note below
- 1/3 cup of salsa
- 1/2 cup of mozzarella or cheddar cheese
- 1 cup finely sliced paprika
- 1/4 cup chopped onions
- 1/2 cup black beans
- 1 tablespoon of olive oil
- 1 lime cut into optional slices
The instructions
- Preheat the oven to 400F. Line the baking sheet with 3 pieces of aluminum foil (about 6 to 8 inches) and set aside.
- Mix the brown rice, water and 2 tablespoons of taco seasoning in a medium bowl and let soak for 5 minutes. Divide the rice (and it's water) into 3 pieces of aluminum foil.
- Pound the chicken with a meat tenderizer or rolling pin until smooth. Season each chicken breast generously with a taco seasoning. Place the chicken on the rice. Give each chicken a few tablespoons of salsa and a pinch of cheese. Add vegetables and beans to the side of the chicken. Sprinkle each packet of olive oil and fold the sides of the film over the chicken, which covers completely; close the closed package.
- Bake for 30 to 35 minutes or until the internal temperature of the chicken reaches 165 ° F. Leave the oven and gently open the foil. place the package under the grill for 3 to 4 minutes. Squeeze the fresh lime juice on each packet, garnish with coriander and sour cream if desired and serve.

Recipe notes
- To make your own taco seasoning for this recipe: combine 2 teaspoons of chili powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of cumin powder, 1/4 teaspoon of dried oregano, 1/4 teaspoon of peppers, 1 teaspoon of salt, 1/2 teaspoon of black.
- For rice *, I use instant rice (brown or white) "5 minutes" for this recipe and I have not tried it with regular rice. Some readers have had success with half-cooked rice.
